Papyrus were approached by Albert Bartlett to come up with some creative concepts for a pop-up restaurant called Capocci’s – named after the Italian culinary pioneer, Ernest Capocci. Once the creative concepts were agreed, we set out converting the two containers into a working
kitchen with a large wood fired pizza oven taking pride of place, awnings and mood lighting were added to give diners the authentic Italian experience. The pop-up restaurant was transported and set up by ourselves at various locations throughout the UK.









A friend of the Albert Bartlett family followed in his father’s footsteps and travelled the globe to learn about gelato, creating the ultimate secret family recipe. After years of serving gelato to his delighted followers he was ready to retire. We at Albert Bartlett’s want to carry on this family secret recipe and bring the Italian heritage of family dining and enjoyment through the development of our restaurant concept with our brand ambassador chef Michel Roux Jnr.
